Yellow Split Pea and Vegetable Soup
This is the perfect, cheap, lock-down soup recipe. It takes approximately 1 hour to make.
Sarah chose this recipe as she loves that split peas are a traditional British crop. She sources these split peas in bulk for Shop Zero from Hodmedod’s in Sussex. Yellow Split Peas are a wonderful source of protein for everyone, but particularly if you are following a vegetarian or vegan diet. They rank high on the list of pulse-protein-providers. They are also a good source of fibre & nutrients. In addition, they provide one of your 5-a-day! Why not search out a local supplier of vegetables, or pop into your local Greengrocers or markets to shop in your own produce bags & avoid plastic packaging?
You can also make a wonderful quick, easy & cheap Dhal from yellow split peas.
Ingredients
A little vegetable oil for frying
1 onion
200g of seasonal vegetables - carrots, swede or turnip work well (skip these ingredients if you don’t have any vegetables available)
200g dried yellow split peas
1.5l vegetable (Bouillon) stock
Method
Soak the split peas in water overnight. Chop the onion. Scrub & peel the vegetables then dice into 1.5cm square chunks. Add the oil to the saucepan, & fry the onions for 5 minutes or so until soft. Add the diced vegetables & fry for 5 minutes more until they start to soften.
Make a stock following the directions for your product. Add to the pan followed by the well rinsed & drained split peas. Bring to a simmer & let the soup cook in a covered pan until the peas are soft (30-40 minutes). Stir to avoid the ingredients sticking to the pan.
Take off the heat. If desired, use a stick blender to liquidise the soup until it is smooth.
Season, if necessary, & enjoy with some bread of your choice!
